Pineapple Ginger Upside Down Cakes

These little cakes are so beautiful and full of flavour. When I tasted the Gewürztraminer the pineapple and ginger really stood out for me. These little cakes isn’t that sweet so it complements the wine beautifully. They are super easy to make and will not disappoint you.




½ cup of sugar

1 cup of tined pineapple rings, cut into titbits and well drained.

¼ cup butter, melted

1 teaspoon of vanilla extract



1 1/3 Cups of flour

½ cup sugar

1 teaspoon baking powder

1 teaspoon of baking soda

1 teaspoon ground ginger

½ teaspoon salt

¼ cup melted butter

1 cup of plain yogurt

1 egg



Pre-heat the oven to 180 oC.

Combine all of the topping ingredients.  Place 1 tablespoon of the mixture into each greased deep muffin cup.

Combine the flour, sugar, baking powder, baking soda, ground ginger and salt together. Add the butter, yogurt and egg and mix well.

Spoon the batter over the topping mixture in the muffin cups.  Bake 20 – 25 minutes.  Cool for 3 minutes. Immediately put onto a serving plate.

Serve warm with whipped cream.
