Pear & Chocolate Loaf




3 Conference pears

1 ½ cup almond flour

½ cup coconut flour

½ cup cocoa

1 tsp bicarbonate of soda

Pinch of salt

3 eggs

4 tablespoons brown sugar

¼ cup coconut oil

1 cup black coffee



Preheat the oven to 180C.

Prepare a loaf pan by lining it out with baking paper.

Peel the pears, and slice off the bottom to make a flat base.

Put all the dry ingredients in a food processor and blitz for 5 seconds.

Add the rest of the ingredients except the pears.

Process for 1 minute until combined.

Pour the mixture into the prepared pan and insert the pears in standing position in a row, pushing them all the way down to the bottom of the base.

Bake for 40 minutes until cooked through.
