Nostalgic Milk Tart

I did my first course in ‘food’ at the age of 14 at the Demo-Den Cooking School of Marcelle Botha in Bloemfontein.  The following recipe comes from her. It is a magnificent milk tart recipe, and even my mom often uses it. I hope you’ll enjoy it with us.

Crusts (2):

125 g butter
1 Egg yolk (keep the egg-white one side)
1 Large cup flour
1 Heaped teaspoon baking powder
Pinch of salt
½ Cup milk


4 Cups milk
1 Cup sugar
1 Tablespoon butter
4 Egg Yolks (add egg-whites to egg-white of the crust)
2 Heaped Tablespoons flour
2 Heaped Tablespoons cornflour
1 Cup milk
Pinch of salt
5 ml Vanilla Essence

Crusts (2):

Soften the butter and add egg yolk. Mix well.
Add flour, baking powder and salt.
Mix to a crumbed texture.
Add milk and mix well to form a soft dough.
Spread the dough evenly into two pie dishes to form the crusts.


Bring to the boil the 4 cups of milk, together with sugar and butter, in a large saucepan or in the microwave oven.
Then mix together the egg yolks, flour, corn flour, milk and salt.
Add to boiled milk mixture.
Boil together, stirring constantly, until mixture thickens to a thick custard.
Add vanilla and mix well.
Beat egg-whites till stiff and fold into custard mixture.
Decant evenly into two crusts.
Sprinkle cinnamon over the top.
Bake for 25 min. at 180 degrees C.
