Panna Cotta is an Italian dessert of sweetened cream thickened with gelatin and molded. I have used coconut milk instead of cream to make it a bit lighter. You can make one big one or individual glasses.
1 x can 400g coconut milk
1/3 cup honey
1 x packet (10gram) gelatin
¾ cup Almond milk
2 teaspoons vanilla extract
250g fresh berries
Sprinkle gelatin over ¼ cup water. Stir gently and allow the gelatin to bloom for 10 minutes.
Place the milk, honey and coconut milk in a saucepan. Heat gently while stirring to mix.
When the milk is starting to steam (do not boil) remove it from the heat. Add the gelatin and stir to dissolve. Add the vanilla.
Pour the mixture into serving cups and let them set for 4 hours before serving with fresh berries.
