It is spring, and everyone is ready for cocktails and colour. I love the shy blossom colour of Spier’s Chardonnay/Pino Noir. It is a magnificent wine on its own and a party stopper as a cocktail.
Serves 4 depending on the size of the glass.
3 cups of Spier Chardonnay/ Pino Noir
5 Strawberry’s crushed
½ cup of sugar
1 cup of water
Make a simple syrup by simmering the sugar and water together until the sugar has been dissolved.
Let it cool.
Mix the simple syrup and chardonnay/pinot together.
In the bottom of the glass spoon a tablespoon of the mashed strawberries.
Top it with the Chardonnay mixture and top it off with ice and sparkling water.
