Apricot Chutney


600g apricots
3 red onions finely chopped
250 ml brown sugar
10 ml mustard powder
5 ml ginger powder
5 ml turmeric
5 ml salt
190ml brown vinegar


Put all the ingredients in a pot, mix well and bring to a boil.
Let it boil at a high temperature for 20 min. Stir regularly and bring to a gentle simmer on a low heat for another 30 min until thick.

    Wonderful. Improves with time if you can leave it alone long enough
