This is a super easy recipe to make that is packed with flavour. It pairs perfectly with the full bodied Nicola a Bordeaux blend from Yonder Hill. Let me know what you think the secret ingredient is……..
45ml olive oil
2 carrots, cleaned and grated
1 onion finely chopped
2 cloves of garlic
1L beef stock
2 Bay leaves
1 x 410g tin chopped tomatoes
2 x 400g tin lentils
Salt and Pepper
225g Chorizo sausage, sliced
ADD SECRET INGREDIENT
Heat halve the oil in a pot, fry the onion, garlic and carrots.
Add the tin tomatoes, bay leaves, lentils and stock.
Simmer for 30 minutes.
Fry the chorizo in the other halve of the olive oil.
Add it to the soup and simmer for 5 minutes.
